Oh man, I could list a ton here. I'll start with the most recent OST I got. The SAO OST is most excellent.
Fairy Tail is another anime with great music. I'm still waiting on that 4th OST though.

The Tenchi Universe episode "No Need for Ryoko" was probably the most devastating thing to happen to my 11 year old self back in the mid 90s. I don't know if it was because it played during that particular episode but I have yet to ever hear anything as haunting as this song since.
Just saw it today, so I'll drop the following track from 1985's Night on the Galactic Railroad (a meditative, metaphysical and dream-like movie about two anthropomorphic cats who take a train across the galaxy - original, often beautiful, but sadly extremely boring). The music is made by a Harumomi Hosono who is a arty music celebrity of sorts if I understand it well (member of the Yellow Magic Orchestra along with Ryuichi Sakamoto).
